According to dictionary.com rekey is defined as follows:

–verb (used with object),-keyed, -key·ing.

1. to fit with different pins and a different key.

What this means to you is that the pins (sometimes referred to as ‘tumblers’) in your locks can be changed to prevent those locks from working with their current keys and, instead, to work on completely new keys.
